If you’re like me you bought a 20lb bird to feed 4 adults and 2 tiny humans…most of whom just want to skip straight to the pie!  I want the leftovers, I need the leftovers…then suddenly on Friday afternoon, I’m already sick of a slice of bird on a plate.

Find me someone who doesn’t love tacos and nevermind…do not introduce me to that person.

The secret to these tacos are of course, in the sauce!


2 cups chopped cooked turkey

1 bag frozen corn – best to unfreeze it by cooking in the microwave

1 can black beans, rinsed and drained

8 – 6″ Corn tortillas – the kind in the refrigerator section have less preservatives



1.5 T fresh lemon or lime juice

1.5 T fresh orange juice

1/2 tsp ground cumin

1/2 tsp hot chili powder

1 clove minced garlic

1 T fresh cilantro

1/4 c plain greek yogurt



Does anyone read fancy nancy books? If not you don’t get it…if so, you know that’s the fancy word for toppings ‘n stuff


cotija cheese – because it’s different and delicious

diced onions/tomatoes/jalepenos


additional lime wedges to squeeze




Whisk all sauce ingredients together in a large bowl.  Toss with turkey and set aside.  If you prefer you can heat the turkey first but it’s going to cool down some when you add the sauce.

Heat the corn and black beans.

That is IT.  Put that turkey on a taco and add the toppings you prefer (more lettuce and less cheese is best)!   My advice for eating this one healthy is to have one corn tortilla and one salad with all the stuff on it…the sauce makes a nice salad dressing as does salsa!

Corn, beans and tortillas all count as yellow containers so be mindful when topping your taco or salad.
